French abstract | Listeria monocytogenes est un pathogène psychrotrophe d'origine alimentaire, responsable d'infections humaines invasives. C'est un microorganisme ubiquitaire et capable de survivre dans des conditions de stress froid et salin rencontrés dans l'industrie de la transformation et le traitement des aliments. Une stratégie utilisée par plusieurs bactéries et en particulier par L. monocytogenes pour l'adaptation au stress osmotique est l'accumulation des solutés compatibles. Ce pathogène utilise deux types de réponses adaptatives aux basses températures : l'ajustement de la fluidité membranaire par un changement de la composition des acides gras membranaires et l'accumulation d'osmolytes de l'environnement. Nous décrivons dans cette revue les mécanismes mis en jeu par L. monocytogenes pour répondre aux stress froid et osmotique liés aux procédés de fabrication alimentaire, et à montrer l'implication de cette adaptation en sécurité des aliments. |

Abstract | Listeria monocytogenes is it psychrotrophic food-borne pathogen. This organism is problematic for food production industry due to its ubiquitous distribution ill nature and its tolerance to condition of osmotic and chill stress. One common strategy employed by many bacteria and by L. monocytogenes for adaptation to osmotic stress is by the intracellular accumulation of compatible solutes. Two different types of adaptative reponses to low temperature have undertaken by L. monocytogenes. One of the responses is accomplished by adjusting membrane fluidity through alteration of the membrane fatty acid composition. A second response consists ill the accumulation of osmolytes. In this brief review we will focus on these general systems Which are Of particular significance to understand the behaviour of this pathogen to the osmotic and chill stress encountered during food process. and we describe sonic of the consequences of stress adaptation ill terms of food safety. | ||||||||
