AB The flesh production of oysters is mainly related to concentrations of dissolved carbon and free amino acids. The younger oysters are dependent on concentrations of pheopigments while the production of the older ones is related to chlorophyll a values of the water-sediment interface. Shell production depends mainly on temperature, but also on the amount of food available: concentrations of dissolved carbon for the younger oysters and values in chlorophyll a of the interface for the older ones.
