AB Après avoir défini la spécificité de la conchyliculture par rapport a l'agriculture et à la pêche, nous avons réalisé une approche globale de la conchyliculture dans l'étang de Thau : présentation de l'étang et des zones conchylicoles puis de la production et enfin de l'organisation de la profession. Ensuite, le travail de connaissance des exploitations a débuté par leur identification, ce qui a nécessité un passage des concessions aux exploitations. Dans la mesure où la dynamique des exploitations est fonction des stratégies des exploitants, nous avons enfin tenté de déterminer celles-ci et voir les interactions de la dynamique du bassin et de celle des exploitations. AB After having defined the specificity of shellfish farming compared to agriculture and fishing, we used a global approach to study shellfish farming in the Thau Lagoon. We present the Lagoon and the shellfish farming zones, then production and finally the organization of this industry. Farms were then delimited, which required identifying concessions and which farming operation they were part of. Insofar as the development of shellfish farms is contingent on the strategies adopted by the shellfish farmer, we attempted to determine these strategies and observe the interactions between the development of the Lagoon and that of farms.
