Ce rapport fait le point sur la filière des produits de la mer en France; du point de vue technique. Dans un premier temps sont abordés les aspects consommation et distribution, suivis d'une description du poisson en tant que matière première pour l'industrie, en soulignant les contraintes propres à la pêche et à l'aquaculture. Ensuite, les principales filières de transformation sont présentées et ce, jusqu'à la valorisation des sous-produits et co-produits. Enfin, quelques informations sur la transposition de systèmes industriels en modèles de taille artisanale sont données, suivies d'un bref aperçu de la localisation de l'industrie halieutique Française.

This report summarises the sea produce sector in France from a technical viewpoint. Firstly, the consumption and distribution aspects are approached, followed by a description of fish as primary material for industry, emphasising the constraints related to fishing and aquaculture. Then, the main sectors of transformation are presented as far as the use of by-products and co-products. Finally, information is provided on the transposition of industrial systems into small-scale models, followed by a briet glimpse of the localisation of the French fishing industry.
